Broccoli Cheese Soup:

1 - lb broccoli, chopped
1 - lb velveeta cheese (low fat works fine)
1 - can Campbell's cheese soup
1 - small onion, chopped
½ - C. milk

Cook Broccoli in 3 C. Water with onion. When cooked, cut up cheese into
cubes and add.  When melted (mostly anyway) add rest of ingredients.  Serve
hot with croutons or hot bread.

This is so fast when you have failed to plan dinner and need it soon, and so
easy to have the ingredients on hand.  You can use fresh or frozen broccoli.
We double it for our family.
