Turkey Rosemary

Dear LOTL!

So nice to be back on the loop after the Christmas break.  It is so nice
hearing from all of you again!

I remembered this recipe that I have made and really like.  Thought I
would pass it along to those of you whom were looking for good crock pot
recipes.  I usually double or triple the vegetable base, spices and
liquids to increase the "gravy" of this dish.  I also have used boneless
chicken breasts or chicken tenders instead of the turkey, and cook it for
less time.  Anyway I make it, it is yummy, as the rosemary and vegetables
give a wonderful flavor.  Enjoy!


TURKEY ROSEMARY

4 pounds turkey hindquarters, thawed and cut into halves or thirds, or
chicken pieces
2 TBLSP cooking oil
2 medium onions, coarsely chopped (1 cup)
2 large stalks celery, coarsely chopped (1 cup)
2 tsp chicken bouillon granules
1 tsp dried rosemary
1/2 tsp salt
dash pepper
1 cup cold water
1/4 cup flour or 2 TBLSP corn starch

Brown turkey pieces in oil.  Drain off oil/fat.  Combine onion, celery
bouillon, rosemary and salt & pepper into crockery cooker.  Add water and
stir.  Place turkey on top.  Cover and cook on low setting for 8 hours.
Drain off liquid and skim off excess fat/oils.  Measure 1 1/2 cups liquid
into saucepan.  Blend 1/2 cup cold water into flour or cornstarch.  Stir
into saucepan with drained liquid.  Cook and stir until thickened.
Return to crockpot and mix in with vegetables.  Add salt and pepper to
taste.  Makes 6 servings.
