My very favorite crock pot recipe is "South Pacific Pork Roast", which I
adapted from Better Homes and Gardens, "Crockery Cooker Cook Book",
copyright 1976. I will print the basic portions, though you can double
the roast size, and everything else, and it turns our great for a crowd,
too.

SOUTH PACIFIC PORK ROAST

1 3 pound boneless pork shoulder roast (or any other type pork roast)
1/2 cup soy sauce
1/4 c vinegar
1/4 c water ( or use 1/2 cup dry wine instead of water and vinegar)
2 cloves garlic, minced
1 TBLSP dry mustard
1 tsp. ground ginger
1 tsp. dried thyme

Place roast in crock pot. Mix other ingredients and pour over roast.
Cook on low setting for 7 to 9 hours, turning roast over, every couple of
hours. Discard marinade. Serve with brown rice (or white if you prefer)
and pineapple sauce.

PINEAPPLE SAUCE

1 20 oz can pineapple tidbits, drained
1 1/2 cup drained pineapple juice mixed with water (Add enough water till
you get 1 1/2 c total.)
2 TBLSP. brown sugar
2 TBLSP. corn starch
2 TBLSP. vinegar
2 tsp soy sauce

In small saucepan, blend brown sugar and corn starch. Stir in the
water/juice combination, vinegar and soy sauce. Cook, stirring
constantly, till sauce is thickened. Add tidbits and heat through.
