I tried these recipes last winter, and we all liked them. Of course I
doubled (or tripled) it for our family. We heat with wood, which means
on really cold days (Ga -style) , I cook! What a better way to keep
toasty in body and soul!

Lentil Soup

1 cup each dry lentils, and chopped carrots,celery,onion
2 cloves garlic, minced
1/2 tsp each dried basil,and oregano
1/4 tsp dried thyme
1 bay leaf
3 1/2 cups vegetable or chicken broth
1 1/2 cups water
1 14 -1/2 oz can Italian style stewed tomatoes

1/2 cup snipped fresh parsley
2 T cider vinegar or salsa (optional)

Rinse lentils , place
lentils,carrots,celery,onion,garlic,basil,oregano,thyme,and bay leaf in
cooker. Stir in broth and undrained tomatoes
Cover and cook 12 hours on low or 5-6 on high. Disgard bay leaf,> Stir in
parsley and vinegar. Makes 6 servings.
