Here is another recipe! :-)

~Enchilada Casserole~

This recipe can be cooked in the crockpot or a casserole dish.

Layer:
*Las Palmas Enchilada Sauce (red or green...or alternate both on layers)
*tortillas (one whole or mixed kinds stripped, corn or flour)
*seasoned cooked ground beef, TVP and /or seasoned pinto or refried beans
(if I use refries or TVP, I chop an onion coarsely to add more texture.)
*grated or sliced cheddar and/or jack cheese
*sliced or whole olives
*chopped green onions
*whole kernel corn (drained). I especially like to add corn if I am not
using meat. (more texture)
*diced green chiles
*sauce
*tortillas
*repeat, etc. etc.
*top with cheese, chopped green onions and sliced olives
I layer all the way up to the top of my 6 qt.crockpot

You can use all of these ingredients or some of them. It is a very flexible
recipe and is always good.

This can be made up ahead and refrigerated over night. It freezes well,
too. Since everything is cooked, the goal is to melt all of the cheese and
heat thoroughly.

When I make this for a potluck at church, I put my crockpot on high when I
get to church and about 2 1/2 hrs. later it is ready to eat!
